Strawberry Eclair Ingredients: 1 quart fresh strawberries
1 package cheesecake-flavor instant pudding
1 1/2 cups cold milk
4 ounces frozen non-dairy whipped topping, thawed
13 1/2 whole graham crackers
Here’s a smooth, no-bake strawberry dessert perfect for summertime. Plan ahead—this cool treat is best when it refrigerates overnight.
Wash the strawberries, remove their stems, and slice the berries. Mix together the pudding and milk with a whisk for two minutes. Add the whipped topping. Measure 1 cup of sliced strawberries and set aside; add the remaining strawberries to the pudding mixture. In a square 8 x 8-inch pan, place graham crackers in a single layer (this should take 4˝ crackers). Spread 1/3 of the pudding mixture over the graham crackers. Repeat two times.
